Sticky Honey & Pomegranate Glazed Salmon

Method

To Make the Pomegranate Honey Glaze

  1. Whisk together the honey, soy sauce, pomegranate juice, pomegranate molasses, chilli, paprika, lime zest, and crushed garlic in a small bowl.

To Cook the Salmon

  1. Marinate the salmon fillets using half of the glaze for 30 minutes.
  2. Preheat your oven to 200°C (Celsius) and line a baking tray with baking paper. Set aside.
  3. Place the remaining glaze and half of the pomegranate seeds into a small saucepan and cook over medium heat until reduced to a sticky glaze.
  4. Drain the marinated salmon fillets and place them on the prepared baking tray. Season with salt and black pepper.
  5. Bake the salmon for 10 minutes, or adjust the cooking time to your preferred doneness.
  6. Once cooked, remove the salmon from the oven and transfer it to a serving dish.
  7. Drizzle the reduced pomegranate honey glaze over the salmon.
  8. Scatter the remaining pomegranate seeds and some more chopped chilli (if desired) over the salmon.
  9. Garnish with lime wedges and serve immediately.
