Balsamic & Pomegranate Roasted Chicken

This flavourful recipe features a free-range chicken roasted to perfection after being marinated in a tangy and sweet mixture of balsamic vinegar, pomegranate molasses, juice, honey, and aromatic herbs and garlic. The regular basting ensures a moist and delicious result, beautifully garnished with fresh pomegranate seeds and thyme.

Method

  1. Make the Marinade: In a bowl, mix together all the marinade ingredients until well combined.
  2. Prepare the Chicken: Generously season the inside and outside of the chicken with salt and black pepper. Stuff the cavity with the halved garlic head and fresh thyme sprigs. Carefully push the cubes of butter under the skin of the chicken, particularly over the breast area.
  3. Marinate the Chicken: Tie the chicken legs together with kitchen string. Pour the prepared marinade evenly over the chicken, ensuring it is well coated. Let the chicken marinate for at least 30 minutes.
  4. Roast the Chicken: Preheat the oven to 180°C (Celsius). Place the marinated chicken in a roasting pan.
  5. Bake the Chicken: Roast for 1 hour and 15 minutes, basting the chicken regularly with the pan juices during the cooking time to keep it moist and flavourful.
  6. Serve: Once cooked through and golden brown, remove the chicken from the oven. Transfer it to a serving platter. Garnish with more fresh pomegranate seeds and sprigs of fresh thyme before serving.
